Tradition has many masks to avoid recognition, stated Cocteau. Here, more than tradition we prefer to talk about customary practices: a protocol of actions we found the best to express our territory. This does not mean to stay closed in the past: it would mean not believe in the future. We look at the future with an eye toward the past. This means being open to innovations, but with a critical spirit, with the sole intent of making wine better. And without forgetting the teachings of those who made wine before us.
