Sensory profile
Ruby red with flashes of rose-petal and coral. Rich, full scents dominate with nuances of spring blossoms, wild rose, and violet over clear notes of wild strawberry and wild berries. The palate is lively and closes lean and crisp, with a pleasant bitterishness and a savoury hint of summer cherry.
Serving suggestion
Prawn gnocchi with chives, traditional fish broth, loin of veal with saffron, ravioli with mushrooms and ricotta.
