Sensory profile
Ruby red tending to garnet. A lovely herbaceous fragrance on the nose over stewed fruit and dried flowers, ending on a note of spice. The palate shows a masterful structure, with tannins already maturing beautifully, flavours of fruit preserve, and a cinnamon and nutmeg-laced end.
Serving suggestions
Stuffed rabbit al guanciale, roast duck with chestnuts, mushroom crêpes au gratin, pork chops with butter and sage.
